Ingredients
- Boneless chicken – 250 gms
- Basmati rice – 1 cup
- Carrot – 1 small – diced
- Beans – 4-5 nos
- Cabbage – sliced
- Green peas – 10 nos
- Corn – 10 nos
- Soy sauce – 1-2 tbsp
- Salt – as needed
- Pepper – as needed
- Oil – 1 tbsp
Method of preparation
- Cook the chicken with water, salt and pepper. It takes about 20 minutes
- Soak the rice for about 20-30 minutes and drain (save the chicken stock to cook the rice).
- Shred the chicken to the prefered size.
- Meanwhile cook the rice in the chicken stock and then drain.
- In a wok pan, warm up oil and cook the vegetables. Mix the shredded chicken and the rice along with the desired amount of soy sauce.
- Turn off the flame and chicken fried rice is ready to be served.
Tips & Tricks
- Cook the veggies on high flame with constant stirring, slow cooking might end up giving dull colored veggies.
- Lime juice can add a little tangy twist to the dish.
