Ingredients
- Eggs – 2 medium, room temperature
- Sugar – 100 gms
- Vanilla extract/ essence – 1 tsp
- Dessicated/baking coconut – 3 cups (sweetened/unsweetened)
- Salt – a pinch
Method of preparation
- Preheat oven to 180 degree celcius.
- Whisk the eggs till it is well blended, and add salt, sugar and vanilla extract/ essence.
- Finally stir the dessicated coconut and leave it aside for 5 mins to make sure that the desiccated coconut is well moistened.
- Using a ice cream scoop or a tablespoon, scoop the mixture to a baking tray and bake for 14-18 minutes.
Tips & Tricks
- If using sweetened desiccated coconut, reduce the sugar content by 50%.
- Adjust the sweetened according to your taste.
- Fresh grated coconut can be used for the recipe, but keep in mind that the shelf life of the product will be lesser compared to the ones made with desiccated coconut.
