Rawa /Semolina – 1 cup
Water – 1 1/4 cup
Ghee – 2 Tablespoon
Ginger – Chopped – 2 teaspoons
Green chilli – Slit – 2
Curry leaves
Mustard seeds
Onion – 1 medium – diced
Carrot – grated – 1/4 cup
French beans – sliced – 1/4 cup
Salt – A pinch
Turmeric powder – a pinch
Cashew nuts and raisins – 1/4 cup
Method of preparation
- Warm up 1/2 tablespoon of ghee and roast the semolina till it turns near to golden brown in colour. Remove it from heat and keep aside.
- Warm up 1 tablespoon of ghee and splutter the mustard seeds, followed by ginger, geen chilli and curry leaves.
- Saute the ginger for a minute or two till the ginger turns golden brown in colour. Toss in the diced onions andsalt and saute till the onions turns translucent.
- Add the carrot and beans and let it cook covered till it becomes 80% cooked. Add the turmeric and stir.
- Add the water, stir and check for the salt. Let it boil.
- As soon as the bubbles appear, turn down the heat to the lowest and add in the roasted rawa and and mix well.
- Mix it till its well combined and cook it covered on low heat for 4-5 minutes.
- Add in rest of the ghee or more as preferred and stir the upma till its lump free .
- Toss in the cashews or raisins fried in ghee or as it.
- Serve hot.
