- Egg – 4 – Large
- Onion – 1 medium
- Carrot – ½ cup – grated
- Cabbage – ½ cup – grated
- Green chili – 2-4 – slit
- Ginger – 1 tbsp. – chopped
- Curry leaves – 5-10 leaves
- Vegetable oil – 1-2 tbsp
- Mustard seeds – ¼ tsp
- Salt – a pinch – to taste

Method of preparation
- Heat oil in a frying pan and splutter mustard seeds, followed by curry leaves, chopped ginger and slit green chilies.
- Sauté the onions, add in salt, and once it turns translucent add in the grated carrot and cabbage and cook them till its turns soft.
- Crack the eggs one after the other into the cooked vegetable and stir vigorously till the eggs are cooked completely.
- Remove from heat and serve hot with bread of your choice.
