Ingredients
- White rice/idili dosa rice – 1 cup
- Cooked rice – 1 tbsp
- Grated coconut – 2 tbsp
- Instant yeast – ΒΌ tsp
- Sugar – as needed
- Salt – as needed
Method of preparation
- Soak the white rice for 1-2 hours.
- Activate the instant yeast and keep it ready to be mixed.
- Into a mixer grinder, grind the grated coconut first and keep aside.
- Then grind the white rice to a smooth paste, followed by the cooked rice and activated yeast.
- Transfer the ground mixture to the ground coconut and keep it in a warm place for at least 5-6 hours.
- Just 10 minutes before making the appams.
Tips & Tricks
- Keep in mind to activate the yeast before adding them into the mixture, thereby making sure that the batter will ferment for sure.
- How to activate yeast: to 2 tbsp tp lukewarm water, stir in 1 tsp of sugar and add the required amount of yeast. Let it rest for 10 minutes and watch out if the yeast has been activated. If not, either the temperature of the water was too high, or else the yeast is spoiled or expired.
- Consider using glass or steel container for fermenting the batter.
- Keep in a warm place.
- Batter can be stored in pre warmed ovens during cold climates to assure that the temperature is apt for fermentation.
